Instant dOsA 

I have already posted ‘Karaiththa (instant) thOsai’. This one is a normal dOsA but prepared in a different way to meet exigency.

Ingredients:

Urad dAl (Dehusked black gram) flour

Raw rice flour

SUji (rava/Semolina)

Sour butter milk

Salt

 

1 cup

2 cups

2 Tbs

1 cup

To taste

 

Method:

Mix all the ingredients well and add water to bring the consistency to that of normal dOsA batter. Mix thoroughly and keep aside for 4 hours after covering. Mix well before making dOsA. Goes well with miLagAippoDi, chutneys and SAmbAr.

Vendaya Bajji

This is very tasty and nice smelling.

Ingredients:

BESan (Bengal gram flour) 

Raw rice flour                       Chopped Fenugreek leaves

Red chilli powder           

Green chilli                   

Salt                              

Oil

½ cup

Method

Add  Tbs oil to the d flours and mix well. Then add a little water to the flours and mix well to the consistency of vaDA batter (a little thicker than iDli batter). Mix in it the other ingredients along with finely cut green chilli. Heat oil in a wok and once a little batter put in it pops up immediately to the surface, start frying the dumplings. When the dumplings turn into golden yellow after frying, remove and place over a strainer to strain excess oil. Goes well with coconut and pudina (Mint) chutneys as well as sauces.
