Multi Recipes II – Multigrain Specials

I have come to the USA to stay with my sons for some time. Here I have come across a few things like Chia seeds, Flax seeds, Sun Flower seeds and Pumpkin Raw seeds that are said to be nutritious and given more importance. I tried my hands on these to venture preparing dOSA, iDli, dumplings and cake that I would like to share with you.

Ingredients

 

Raw rice

Chia seeds

Sun flower seeds

Flax seeds

Pumpkin Raw seeds

Oil

Salt

Method

Wash and soak the above in water, rice separately and all other grains together for at least 2 to 3 hours. Then drain the water and grind rice separately with fine consistency while the others are to be ground together finely. You need to add water while grinding to bring the ground matter in the form of dOSA batter. Mix the rice batter with that of the other ones and add a pinch of salt and mix well with clean hand. You can make doSAs after about 5 to 6 hours using this batter. Any chutneys or SAmbAr will be good side dish for this including the famous miLagAyppoDi.

You need the same things as mentioned above. The preparation of batter is also the same except here the rice is ground coarse and the batter is allowed to ferment after mixing of all the ground items with a pinch of salt mixed at least for 24 hours.

Can be taken along with SAmbAr, Chutnies or milagAyppoDi.

Note: You may further experiment the above quantities to suit the type of rice you use and the outcome.

You can make Uttappams too using the above batter.

The multigrain seeds shown above are very good for health and even for diabetics.

Multigrain Dumpling

Ingredients

 

Raw rice

CanA dAl (Bengal gram)

urad dAl (Black gram)

tUr dAl (Split lentil gram)

Chia seeds

Sun flower seeds

Flax seeds

Pumpkin Raw seeds

Green chillies (Medium)

Red Chillies (Medium)

Coriander leaves

Onion (Shallots)

Oil

Salt

Method

Wash the above grains and soak all together in water for 2 to 3 hours. Drain the water and grind coarsely along with chillies and salt to taste. You can increase chillies if you want the dumpling hotter. Similarly, to enhance the taste you can add ginger, garlic and aniseed too. Add to the ground mixture the cut onion pieces and chopped coriander leaves.

Make small dumplings and fry them in oil under medium flame till they are crispy. Serve hot with sauce or green mint chutney.

Ingredients

Flax seeds

GhI (Clarified butter)

Sugar

Method

Roast the grains separately and grind all finely. Take a kaDAi (Wok) and heat sugar in 1½ cups of water till you get 2 string consistency. Add the roasted grain powders and mix well. Add the ghI also and after 5 minutes, spread the contents over a tray to cut into cakes when it is warm.  Multigrains cake

If you want to prepare laDDu, instead of adding the roasted grain powder to sugar syrup as above, just take them in a small vessel, add finely powdered sugar of the same quantity and 1 tablespoon ghI. Mix well and make small laDDus.
